Description

Chop the mixed dry fruits and nuts into small pieces if they're not already chopped.
Toss them in a little flour to prevent them from sinking to the bottom of the cake while baking.
In a large mixing bowl, sift together the all-purpose flour, baking powder, baking soda, and salt. If using, add cinnamon and nutmeg for extra flavor.
In another bowl, whisk together the sugar, oil or melted butter, yogurt, and vanilla extract until well combined.
Gradually pour the wet ingredients into the dry ingredients bowl. Mix until just combined. Do not overmix to avoid a tough cake texture.
Pour the batter into the prepared cake pan. Smooth the top with a spatula.
Then, transfer the cake to a wire rack to cool completely before slicing and serving.
Once baked, remove the cake from the oven and let it cool in the pan for about 10-15 minutes.
You can optionally drizzle a simple glaze made of powdered sugar and milk over the cooled cake for added sweetness.
