- Bees collect nectar from flowers using their tongues and store it in a special "honey stomach". On the way back to the hive, enzymes in the bees' stomachs begin to break down the complex sugars into simpler ones. Once in the hive, the nectar is passed from bee to bee, with each bee adding more enzymes.
- Worker bees deposit the nectar into honeycomb cells, then fan their wings to evaporate excess water, which thickens the honey. The bees seal the finished honey in the honeycomb with a beeswax cap for preservation.
- Honey is approximately 70-80% carbohydrates (mostly sugars) and 10-20% water. It also contains small amounts of amino acids, vitamins, minerals, and antioxidants. The flavor, color, and aroma of honey vary greatly depending on the types of flowers the bees visited. It is a long-lasting food due to its low water content and acidic pH, which prevents bacteria from spoiling it.
- Honey is rich in beneficial plant compounds known as antioxidants, which help neutralize damaging compounds in the body. Darker honey varieties generally contain more antioxidants than lighter ones.
- It has long been used traditionally to soothe sore throats and is effective for coughs. It contains antibacterial and anti-inflammatory properties.
