Tapioca sticks, also known as cassava sticks, are a popular snack in Kerala, India. Made from the starchy cassava root, these thin, crispy fries are enjoyed as a street food and teatime treat, offering a burst of flavor with every bite. They are perfect for sharing with friends and family and pair beautifully with dips or chutneys. Preparation: Peeling and Slicing: Begin by thoroughly washing the cassava roots to remove any dirt. Peel off the thick brown outer skin to reveal the white fibrous interior. Using a sharp knife, slice the cassava into thin sticks. This step requires patience, as the tuber is quite hard and starchy. Blanching: Bring a pot of water to a rolling boil, then remove it from heat. Immerse the cassava sticks in the hot water for about 5 minutes to soften them slightly. Afterward, strain the water and spread the sticks on a clean cloth or kitchen towel to dry. Frying: Once the sticks are dry, heat cooking oil in a deep pan over medium heat. Deep-fry the cassava sticks in batches until they turn golden brown and crispy. Ensure not to overcrowd the pan to maintain the oil temperature. Seasoning: While the fried sticks are still hot, sprinkle them with salt. For added flavor, you can also sprinkle pepper powder or red chili powder to make them spicy
